Makes a small jar full (enough for about 5 portions)

*100g cooked quinoa

*50g raisins

*50g pitted and chopped dates

*50g walnuts

*50g cashew nuts

*3 tbsp of chia seeds

*2 tbsp of flax seed

*4 tbsp of coconut palm sugar

*1 heaped tbsp of coconut oil

*You can activate your nuts to make them more digestible by soaking overnight, and drying them again in the oven on a very low heat.

Pre-heat the oven to 180°C/Gas mark 6.

Chop the cashews, walnuts and dates.

On a low heat melt the coconut oil in a frying pan then add the nuts, dates, raisins, coconut sugar and quinoa.

Once everything is combined, transfer onto a baking tray and bake in the oven for 25/30 minutes until the cereal is golden.

Let the bake cool and transfer onto a board to break up into pieces.

Store in an airtight jar and enjoy on its own with some unsweetened nut milk, or sprinkled on top of some sugar free coconut yoghurt.
